Homemade Healthy Fruit Gummies

Ingredients:

2.5 cups whole strawberries (frozen is ok)

The juice of 2 oranges (save the peels for Citrus Coop Cleaner!)

1/2 of a ripe banana, sliced (or broken up cos I’m lazy)

5 packets unflavored gelatin (1/4 oz each)

 

Place strawberries and orange juice in large pot.

Bring to a boil.

Remove from heat.

Add banana pieces.

Slowly wisk in gelatin a little at a time.

With an immersion blender, blend the contents of the pot until smooth with an even consistency.

Pour strawberry mixture into a greased 3 qt 9×13 casserole dish.

Refrigerate until jiggly (about 30 minutes – 1 hour).

Cut the jiggly into 1/2″ squares or use mini cookie cutters of your choice.

Keep the gummies in an air tight container in the refrigerator.

A few tips:

Don’t try to use a blender to blend the strawberry mixture and gelatin together. You will end up with a hot sticky mess all over your kitchen. Don’t ask me how I know that.

You can use any fresh fruit for this recipe. Just try to use the same measurements. Have fun! Experiment with your kids, then share your results with me!

You could add all of the fruit ingredients into the pot before and bring it to a boil at once, but I felt weird about boiling bananas. I thought they may lose their taste or change color. I could be wrong.

I used my homemade dandelion/sunflower oil to coat the pan before I poured the mixture into it. But you can use any oil you prefer, or butter (because butter is good for you!)

 

My girls loved these gummies! I thought they were pretty tasty too!
